Lemon Basil Salmon With Burst Tomatoes and Green Beans

Serve up something light and bright with this easy sheet pan dinner.

INGREDIENTS

  • Salmon fillets
  • 2 bunches basil
  • 2 lemons
  • Butter or ghee
  • 1 pint cherry tomatoes
  • 3 big handfuls Green beans
  • Avocado or olive oil
  • Salt and pepper

PREP

  1. Preheat oven to 350.
  2. Trim ends of green beans.
  3. Cut tomatoes in half.
  4. Zest one lemon.
  5. Slice the other lemon.
  6. Chop basil.
  7. Melt butter or ghee.

COOK

  1. Brush salmon fillets with melted butter and place on sheet pan.
  2. Top salmon with lemon zest and basil.
  3. Toss tomatoes and green beans with oil, salt, and pepper and spread out on pan.
  4. Roast for 20 mins or longer to desired doneness. Check salmon with a fork!

PLATE

  • Plate the salmon and beans across the plate, and scatter tomatoes on top.
  • Serve with additional lemon slice, basil, and lots of pepper. Yum!
